A Culinary Journey Begins
When Vikas Khanna expressed his desire to delve into the culinary arts, his father responded with skepticism, suggesting that he would merely be seen as a server. “My father questioned what I could achieve through cooking, asking if I would ever cook for the President of America. However, my grandmother, Bimla Khanna, who was present, interjected with a supportive ‘thathastu’,” Khanna recounted during an interview in Amritsar.
Support from Family
Khanna reminisced about how his father eventually gifted him his first tandoor for his birthday, a moment that filled him with pride. This story highlights the deep respect Khanna has for the women in his life, including his grandmother, mother Bindu Khanna, and late sister Radha. “They have always been my pillars of support. While my father had doubts, my mother steadfastly believed in my aspirations,” he shared at a special event organized by Phulkari — Women of Amritsar.
From Humble Beginnings to Global Fame
Reflecting on his rise from working at a modest banquet venue to being the first Indian chef featured on the TIME 100 Most Influential People list, Khanna expressed that he feels his most significant contributions are still ahead. “The announcement of the Times 100 left me momentarily speechless. It made me realize the global significance of Indian cuisine,” he noted.
Bungalow: A Tribute to Family
His latest venture, Bungalow in New York, serves as a heartfelt tribute to his sister Radha, fulfilling a promise made to his mother. The restaurant has gained immense popularity, boasting a waiting list of over 10,000 patrons. “Bungalow is more than just a restaurant; it’s a venue for celebrating Indian culture. People come not only for the food but to mark special occasions, like a recent guest who celebrated her 100th birthday with us,” he explained.
A Multifaceted Talent
In addition to his culinary achievements, Khanna is also a filmmaker, producer, and author. His upcoming film, Imaginary Rain, features Shabana Azmi and Prateik Patil Babbar in lead roles. He expressed his excitement about the film's release, stating, “After watching the trailer, I felt a rush of emotions. I believe audiences will see a lot of my creative spirit in this project.”
Exploring Themes of Identity and Healing
The film, adapted from Khanna’s 2023 novel of the same name, is an emotional drama that intertwines themes of food, grief, family, and identity. “The story begins in New York and culminates at the Golden Temple’s langar, the world’s largest kitchen. It uses Indian cuisine as a medium to explore healing and self-discovery,” he elaborated.
A Heartfelt Connection
Recently, the film garnered attention due to the poignant connection between Shabana Azmi and Prateik Patil Babbar, the son of the late actress Smita Patil. During filming, Azmi shared a touching moment with him, expressing her belief that “Smitaji will be watching over us.” Khanna described Imaginary Rain as “the pinnacle of my work,” and considers directing Azmi one of the greatest honors of his career.
