**Ingredients for Tacos**
4 to 5 Leftover Rotis
200 grams Paneer (Indian Cottage Cheese)
1 finely chopped onion, 1 capsicum (bell pepper), ½ cup boiled corn
2 tablespoons mayonnaise, 2 tablespoons tomato ketchup, 1 tablespoon green chutney
½ teaspoon chili flakes, ½ teaspoon oregano, ¼ teaspoon black pepper powder, salt to taste
½ cup Cheese
Butter or Oil for toasting
**Method for Making Paneer Tacos**
Begin by heating a tablespoon of oil or butter in a pan. Add the chopped onions and sauté until they turn light pink. Then, incorporate the capsicum and boiled corn, cooking over high heat for 2 minutes to keep the vegetables crunchy.
Next, introduce the paneer cubes along with chili flakes, oregano, black pepper, and salt. Mix well and sauté for an additional 1–2 minutes before removing from heat. Your paneer filling is now ready.
In a separate bowl, combine mayonnaise, tomato ketchup, and green chutney to create a flavorful sauce that will enhance the tacos' taste.
Take one leftover roti and spread the sauce generously on one half. Layer the paneer and vegetable mixture on top, followed by a good amount of grated cheese. Fold the other half of the roti over the filling to form a crescent shape.
