Delicious Homemade Rabri Kulfi

Refreshing Rabri Kulfi Recipe to Beat the Heat


Ingredients


2 liters of milk


3 teaspoons of custard milk


1 pinch of saffron


1 teaspoon of corn flour


Sugar to taste


Preparation Method


- Begin by heating a large pan on the stove and pouring in 2 liters of milk. Reserve half a glass of this milk for later use.


- Allow the milk to simmer until it reduces by half. Once it does, incorporate half a cup of sugar and a pinch of saffron.


- In a separate bowl, mix 1 teaspoon of corn flour with 3 teaspoons of custard milk. Combine this mixture with the reserved half glass of milk.


- Gradually add this blend back into the simmering milk, stirring continuously over medium heat for about 7 to 8 minutes.


- Next, prepare the caramel by melting half a cup of sugar in a pan over medium heat until it liquefies. Stir this caramel into the milk mixture for added flavor and color.



- Once the mixture has cooled slightly, set aside half a cup of rabri in a bowl and refrigerate it.


- Pour the remaining mixture into kulfi molds. You can use cups for individual servings.


- Cover the cups with aluminum foil and insert wooden sticks into each one. Place them in the freezer overnight to set.


- When you're ready to enjoy your kulfi, remove it from the freezer and dip it in the extra rabri you set aside for a delicious treat.
