When craving pizza, we often order 'Zingy Parcels', but what if you could whip them up at home without stepping out?
Today, we present a simple recipe to create crispy and cheesy Zingy Parcels right in your kitchen. The best part? No oven is required! We’ll be using a kitchen *kadhai* (wok/deep pan), and we assure you, they will taste just like the store-bought version.
**Ingredients for Zingy Parcels**
**For the dough:**
1 cup all-purpose flour (Maida)
2 tbsp yogurt (Curd)
½ tsp baking powder
¼ tsp baking soda
Salt to taste
1 tbsp refined oil
Water for kneading
**For the zesty stuffing:**
½ cup paneer (Cottage cheese), diced
2 tbsp mayonnaise
1 tbsp tomato ketchup
½ tsp chili flakes
½ tsp oregano or pizza seasoning
¼ tsp garlic paste
½ cup mozzarella cheese, grated
**Other ingredients:**
2-3 tsp milk (for brushing)
Butter (for brushing after baking)
**Method for making Zingy Parcels**
In a large bowl, mix the all-purpose flour, baking powder, baking soda, salt, and yogurt. Gradually add water to form a soft dough. Coat the dough with a bit of oil, cover it, and let it rest for 15 to 20 minutes.
While the dough rests, prepare the stuffing by mixing mayonnaise, tomato ketchup, garlic paste, chili flakes, and oregano in a bowl. Add the diced paneer and gently toss to coat evenly. Your tasty paneer stuffing is ready.
Heat a heavy-bottomed pan (kadhai) on the stove. Place a steel stand or an inverted bowl inside it. Cover the pan with a lid or plate and preheat over low-to-medium heat for 10 minutes, creating a 'desi oven'.
Divide the rested dough into small balls the size of lemons. Roll one ball into a circle, then fold the edges inward from three sides to form a triangle.
Put a spoonful of the paneer stuffing in the center and top it with mozzarella cheese. Bring the corners together to seal, using a little water to ensure they stay closed during cooking.
Grease a steel or aluminum plate with oil or butter. Arrange the Zingy Parcels on the plate, leaving space between them. Brush the tops with milk for a golden finish.
Carefully place the plate in the preheated pan. Cover and let them cook on low heat for 20 to 25 minutes.
After 20 minutes, check if they are golden brown and the cheese has melted. If so, turn off the heat.
Your hot, crispy, and cheesy Zingy Parcels are now ready! Brush them with melted butter for added flavor and shine.
