The much awaited festival of colors is next week and we are eagerly waiting for it. Holi is also the best time to indulge in neighborhood sweets like gujiyas, ladoos, puran poli and many more. While the domain of 'holi colors' isn't usually the kitchen, we thought of introducing the theme to food - with a twist! Thus, we have come up with a special recipe for a colorful sweet: Rangeella Barfi. This barfi is sure to brighten up your plates and impress your guests. Besides being very easy to make, it is also very tasty and easy to customize to your liking. What more could you ask for? Here's how you can make it at home:

How to make Rangela Barfi | A recipe for a special colorful barfi
What you need: This recipe uses basic ingredients like sugar, ghee, milk, milk powder, cardamom powder and food colouring. You can also add other flavors and dry fruits as desired. Some versions of this barfi include maida and khoya for extra thickness, but you can get the same results without using them.

How to prepare barfi:
- In a pan, mix melted ghee, milk and milk powder. Remember to keep stirring the mixture so that no lumps form. Dissolve the sugar in the mixture and stir. Once the mixture starts not leaving the pan, add the cardamom powder and mix well. Turn off the heat and carefully transfer the mixture to a bowl.
- Place the mixture in 4 separate bowls (or as many colors as you like) and mix in the food coloring in all but one bowl (this can be used as white). Grease a tray with tall sides, cake pan or similar container. Spread the mixture from the first bowl on the tray with a spatula, but not too thin.
- Next, spread the mixture from the second bowl on top of the first layer. Continue until all layers are made.
- Form the layered shape into small squares and transfer each to a serving plate. Shaved almonds on top as a garnish.
