Panchkuti Dal Recipe

**Ingredients Needed**
Panchkuti Dal is a nutritious mix of Arhar, Chana, Masoor, Urad, and Moong dals. Here’s how to prepare it:

1/2 cup Moong dal (with skin)
2 tbsp Arhar dal
2 tbsp Chana dal
1 tbsp Masoor dal
1 tbsp Urad dal
2 finely chopped green chilies
1 tbsp oil
1 tsp grated ginger
1 tsp cumin seeds
1 pinch asafoetida (hing)
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
2 bay leaves
2 tsp dry mango powder (amchur)
2-3 cloves
1 tbsp tamarind pulp
Salt to taste
Water as needed

To prepare Panchkuti Dal, start by combining the Moong, Arhar, Chana, Masoor, and Urad dals in a bowl and rinse them well.

Allow the mixture to rest, covered, for about 10 minutes.

Next, in a pressure cooker, add the washed lentils along with sufficient water.

Add salt to taste and 1/2 teaspoon of turmeric powder, then bring it to a boil.

After 2-3 whistles, check if the lentils are tender, then turn off the heat and let the steam escape.

In a separate non-stick pan, heat 1 tablespoon of oil.

Once hot, add cumin seeds, asafoetida, bay leaves, and cloves, and sauté briefly. Then, incorporate the chopped green chilies and grated ginger, continuing to sauté.

After sautéing, mix in red chili powder, garam masala, dry mango powder, tamarind pulp, and coriander powder.

Cook until the spices release their aroma and oil separates.

Finally, add the cooked Panchkuti dal to the pan and stir well.

Let it simmer on medium heat for 4-5 minutes.
