100 grams of flour
A small amount of ghee
1 cup of mawa
2 teaspoons of gram flour
1/4 cup of ground almonds
1/4 cup of ground pistachios
Saffron strands soaked in milk
1/2 teaspoon of cardamom
Powdered sugar
Step-by-Step Recipe
Recipe
Begin by heating a pan over medium heat and adding the mashed mawa. Once it warms up slightly, transfer it to a bowl, which should take around 3-4 minutes. Next, add ghee to the pan, followed by the gram flour. As the flour starts to change color, incorporate the almond powder and mix thoroughly. When the almonds begin to roast, add the pistachio powder. Pour the heated mawa and pistachio mixture into a separate pan.
To enhance the flavor and color, sprinkle the soaked saffron and cardamom into the mixture and stir well. Adding sugar to the warm stuffing will cause the mawa to melt, so knead the flour while the stuffing cools. Mix a teaspoon of ghee into the 100 grams of flour, gradually adding water to form a soft dough. Once the mawa stuffing has cooled, mix in the sugar.
Heat 4 teaspoons of ghee in a vessel and refrigerate it for later use to coat the sweet. Take a small round bowl, fill it with the stuffing, and shape it accordingly. Similarly, create round shapes for the puri stuffing and roll the flour into small rotis.
Now, place the stuffing inside the flour and seal it into a modak shape. Prepare all pieces in this manner and heat ghee in a pan on one side. Ensure the ghee is at a medium temperature. Add one piece at a time and fry until it turns a light golden color. Avoid over-frying, as it can ruin the flavor. Once all pieces are fried, take the ghee from the refrigerator and mix it with powdered sugar. Coat each piece evenly and garnish with pistachios and almonds.
