Veg Dum Biryani Recipe
Veg Dum Biryani Recipe: If you enjoy the fragrant and tasty Veg Dum Biryani typically found in restaurants, there's no need to dine out anymore. You can create a delightful Veg Dum Biryani in your own kitchen using basic ingredients and spices. This dish includes Basmati rice, fresh vegetables, yogurt, and a mix of unique spices. The cooking method, known as 'dum', involves low heat, which greatly enhances the dish's flavor and aroma. Here’s a straightforward recipe to make it.
For this Veg Dum Biryani, gather 2 cups of Basmati rice, 6 medium onions, 20–25 garlic cloves, a 2-inch piece of ginger, 3–4 green chilies, 1 tomato, 2 carrots, some French beans, half a head of cauliflower, 2 potatoes, and half a cup of peas. Additionally, have 200 grams of yogurt, 3–4 tablespoons of oil, half a teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 tablespoon of black pepper, 2 teaspoons of coriander powder, 1.5 teaspoons of Biryani masala, salt, fresh coriander leaves, and mint leaves ready.
Step 1: Start by rinsing the Basmati rice thoroughly in clean water until the water is clear. Soak the rice for at least 30–45 minutes. After soaking, drain the water and cook the rice in a pot with enough water until it is about 70–80% cooked. Avoid overcooking; the rice should not be completely soft.
Step 2: For the Biryani gravy, finely chop the onions, ginger, garlic, green chilies, and tomatoes. Also, chop the fresh coriander and mint leaves. Cut the vegetables—carrots, French beans, cauliflower, and potatoes—into medium-sized pieces, ensuring the potato pieces are slightly larger than the others.
Step 3: Heat a large, heavy-bottomed pot over high heat and add oil. Once hot, add the chopped onions and sauté until golden brown. Then, add the ginger, garlic, and green chilies, cooking for 2–3 minutes. Next, incorporate the turmeric, black pepper, red chili powder, coriander powder, and biryani masala, mixing well. Add the chopped tomatoes, whisked yogurt, and salt to taste. Stir everything together and cook on high heat until the oil separates from the spices.
Step 4: After the gravy is well-cooked and the oil has separated, add the chopped potatoes and sauté for 2–3 minutes. Cook on low heat until the potatoes are tender. Then, add the remaining vegetables—carrots, French beans, cauliflower, and green peas—and mix well. Add hot water as needed to achieve the desired gravy consistency, allowing the vegetables to cook thoroughly.
Step 5: Gently mix the cooked basmati rice into the vegetable gravy. Sprinkle fresh mint and coriander leaves on top. Drizzle melted ghee over the surface, then cover the pot tightly with a lid. Allow the biryani to cook on low heat (the 'dum' process) for 20–30 minutes, letting the spices infuse into the rice and vegetables. Once done, turn off the heat and serve the hot Veg Dum Biryani with raita or salad. It's a dish that even kids will enjoy!
