The unique aspect of this recipe is that the sauce is made by roasting the tomatoes first, which greatly enhances the flavor and aroma of the pasta. This dish is simple to prepare at home. Let's explore an easy recipe for Roasted Tomato Sauce Pasta.
For the roasted tomato sauce, gather 5 tomatoes, 2 onions, 10–12 garlic cloves, 2 teaspoons of oil, a pinch of salt, and a bit of warm water. To boil the pasta, you will need 200 grams of pasta, sufficient warm water, and a pinch of salt. Additionally, for the seasoning and sauce base, collect 2 tablespoons of olive oil, 1 tablespoon of Kashmiri red chili powder, 100 grams of cream cheese, 2 teaspoons of honey, half a teaspoon of black pepper, and 15 basil leaves.
Step 1: Start by halving the tomatoes. Heat a pan on the stove and add a little oil. Once the oil is hot, place the tomatoes cut-side down in the pan. Add the chopped onions, garlic cloves, and a pinch of salt. Roast all the ingredients over medium heat, stirring the onions occasionally to ensure even roasting until the tomatoes are soft and fully cooked.
Step 2: After the tomatoes are well-roasted on one side, flip them and add a bit of warm water to the pan. Cover the pan and let the mixture cook for 5–6 minutes, or until the tomatoes are completely soft. Once done, turn off the heat and let it cool slightly. Transfer the roasted tomatoes, onions, and garlic into a mixer jar and blend until smooth. This will create a thick purée that serves as a delicious base for your pasta.
Step 3: Fill a large saucepan with the necessary amount of water, add a pinch of salt, and bring it to a boil. Once boiling, add 200 grams of pasta. Cook the pasta over medium heat for about 10 minutes, ensuring it becomes soft but not overcooked. Once finished, turn off the heat, drain the water, and set the pasta aside. (For a delightful evening snack, consider preparing some crispy soya balls to accompany your tea.)
Step 4: In a saucepan, heat some olive oil. Add Kashmiri red chili powder and stir briefly. Then, incorporate the roasted tomato purée and mix well. Add the cream cheese and cook while stirring continuously until the sauce is smooth and creamy. Taste the sauce and adjust the salt and spices as needed. Your creamy roasted tomato sauce is now ready.
Step 5: Once the pasta is cooked, add it to the roasted tomato sauce. Stir in honey, black pepper, and fresh basil leaves. Mix thoroughly to ensure the sauce coats the pasta evenly. Cook over low heat for another 2–3 minutes. Your rich and creamy roasted tomato-garlic pasta is now ready to be served hot to the children.
