Sometimes, we find ourselves without fresh vegetables at home, leading to a craving for something different from our usual *dal-roti* (lentils and flatbread). In such moments, a delightful Rajasthani dish can be the perfect solution. Today, we’ll explore the recipe for the traditional *Papad ki Sabzi* (Papad Curry).
Ingredients for Rajasthani Papad Sabzi

5-6 papads
1/2 cup yogurt (curd)
2-3 tomatoes
2-3 tablespoons fresh coriander leaves
1 tablespoon *Kasuri Methi* (dried fenugreek leaves)
2-3 finely chopped green chilies
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
1 teaspoon coriander powder
1-inch piece of ginger
1 pinch asafoetida (*hing*)
Salt to taste
Preparation Method

Begin by roasting the papads; you can do this in a pan with a bit of oil or directly over a gas flame without oil, depending on your preference.
Next, dilute the yogurt with half a cup of water and whisk it until smooth.
Heat 2-3 tablespoons of oil in a pan. Once hot, add cumin seeds, asafoetida, ginger, and green chilies to sauté.
In the meantime, puree the tomatoes finely.
Add the tomato puree to the pan along with red chili powder, turmeric powder, coriander powder, and *Kasuri Methi*.
Sauté this mixture until the oil separates from the spices.
Pour in 1 cup of water and season with salt. Allow the gravy to simmer on low heat; once it starts boiling, gradually add the yogurt mixture while stirring continuously to prevent curdling.
After a few moments, mix in the chopped coriander leaves.
Finally, incorporate the roasted papads and let the dish cook on low heat for an additional 2 minutes. Serve your Papad Sabzi with rice or roti for a satisfying meal.
