Ingredients
2 cups wheat flour
½ cup all-purpose flour
1 cup brown sugar
½ cup peanut butter
¼ cup salted butter
¼ cup unsweetened cocoa powder
1/3 cup dark chocolate or chocolate chips
½ cup milk
1 teaspoon vanilla extract
2 tablespoons flaxseed powder
6 tablespoons cold water
1½ teaspoons baking powder
Instructions
Begin by combining 2 tablespoons of flaxseed powder with 6 tablespoons of cold water in a small bowl and set it aside. In a separate bowl, sift together the wheat flour, all-purpose flour, and baking powder. In another bowl, mix the butter, sugar, cocoa powder, and peanut butter until smooth. Incorporate the flaxseed mixture into this blend and stir well. Gradually add the milk and vanilla extract while whisking. Finally, fold in the sifted dry ingredients and mix until combined. Stir in the chocolate chips or dark chocolate pieces.
To bake, layer salt or sand in a heavy-bottomed pan or *kadhai*. Place a stand or an inverted bowl over the salt, cover, and preheat for 10 minutes. Fill muffin molds with the batter and place them on the stand inside the pan. Cover and bake on medium heat for 20 to 25 minutes. Check for doneness with a toothpick; if it comes out clean, the cupcakes are ready. Enjoy these nutritious and delicious peanut butter chocolate cupcakes with your children!
