• Spinach: 250 grams (washed and finely chopped or lightly blanched)
• Paneer: 200 grams (crumbled by hand)
• Onion: 1 large (finely chopped)
• Tomatoes: 2 medium (finely chopped)
• Ginger-Garlic Paste: 1 teaspoon
• Green Chilies: 2 (adjust to taste)
• Spices: Cumin seeds (1/2 teaspoon), turmeric powder, red chili powder, coriander powder, garam masala, and salt.
• Oil or Butter: 2 tablespoons
Steps to Prepare Palak Paneer Bhurji
Preparation Method:
Begin by heating oil or butter in a pan. Once hot, add cumin seeds and allow them to splutter. Next, incorporate the finely chopped onion and green chilies, sautéing until the onions turn a light golden brown.
Then, add the ginger-garlic paste and cook for about a minute to eliminate the raw taste. Following this, mix in the chopped tomatoes along with a pinch of salt, cooking until the tomatoes are soft.
Now, introduce turmeric powder, coriander powder, and red chili powder. After sautéing the spices, add the chopped spinach. Allow it to cook on medium heat for 3-4 minutes until the water released by the spinach evaporates.
Next, add the crumbled paneer to the mixture. Gently fold it in with the spinach and spices, being careful not to overmix to maintain the paneer's texture.
Finally, sprinkle half a teaspoon of garam masala on top. For added flavor, you can include fenugreek leaves (kasuri methi). Cover the pan and let it cook for another 2 minutes before turning off the heat. Your delicious spinach and paneer scramble is now ready to be served with plain roti, paratha, or buttered toast.
