Ingredients for Potato Cutlets:
4–5 boiled potatoes (mashed)
1.5 cups boiled carrots, peas, and beans
1 cup breadcrumbs or semolina (suji)
1 tsp ginger-garlic paste
2 green chilies (finely chopped)
2 tbsp coriander leaves
Salt to taste
1 tsp black pepper or garam masala
2 tbsp cornflour or gram flour (besan)
Instructions for Preparing Potato Cutlets
Begin by combining the mashed potatoes and boiled vegetables in a large bowl.
Add the ginger-garlic paste, green chilies, coriander leaves, salt, and spices, mixing everything thoroughly.
Incorporate the breadcrumbs or semolina to help bind the mixture, which is essential to prevent the cutlets from falling apart.
Next, add cornflour or gram flour to solidify the mixture, ensuring the cutlets maintain their shape.
Shape the mixture into small patties. Heat a non-stick griddle or pan without oil and place the cutlets on it, cooking over low heat.
Be cautious not to flip them too early, as they may break. Once one side is golden and crispy, gently turn them over and cook until both sides are done.
If you prefer, you can also use an air fryer, cooking at 180°C for 10–12 minutes.
These healthy cutlets pair wonderfully with green chutney, a yogurt dip, or tomato sauce.
