Ingredients:
- 200g Mushrooms
- 1 cup Green peas
- 2 medium Onions
- 2 large Tomatoes
- 1 tbsp Ginger-garlic paste
- 1 Bay leaf
- 1 tsp Cumin seeds
- 1 inch Cinnamon stick
- 1/2 tsp Turmeric powder
- 1 tsp Red chili powder
- 1.5 tsp Coriander powder
- 1/2 tsp Garam masala
- 1 tsp Kasuri methi (dried fenugreek leaves)
- Salt to taste
- 2 to 3 tbsp Oil/Ghee
- Fresh coriander leaves, finely chopped
Preparation Method:
Begin by rinsing the mushrooms in lukewarm water to eliminate any dirt, then slice them in half.
Heat a tablespoon of oil or butter in a pan (kadhai), add the sliced mushrooms, and sauté over medium heat for about 3–4 minutes.
As the mushrooms release moisture, continue to sauté until the liquid evaporates, then set them aside on a plate. In the same pan, add more oil and toss in the cumin seeds, bay leaf, and cinnamon stick.
When the cumin seeds start to crackle, add the chopped onions and sauté until they turn a light golden color. Incorporate the ginger-garlic paste and stir for a minute.
Next, add the tomato puree along with turmeric powder, red chili powder, coriander powder, and salt; mix thoroughly. Allow this masala to cook on low heat until the oil separates from the sides of the pan.
Once the masala is well-cooked, add the green peas and the sautéed mushrooms. Stir them with the spices for 2 minutes to allow the flavors to meld.
Pour in 1 to 1.5 cups of warm water (adjust as needed), cover the pan, and let it simmer on low heat for 8 to 10 minutes until the peas are tender.
After cooking, add garam masala, crushed kasuri methi, and chopped fresh coriander; mix well and turn off the heat.
