Basmati rice – 2 bowls
Red bell pepper – 1/2 piece
Yellow bell pepper – 1/2 piece
Green bell pepper – 1/2 piece
Sweet corn – 1 cup
Red kidney beans – 1 cup
Chopped onions – 2
Tomato puree – 1 1/2 cups
Oregano – 2 teaspoons
Tomato sauce – 3 tablespoons
Finely chopped green chilies – 2
Finely chopped garlic – 4 cloves
Olive oil – 3 tablespoons
Green onion – 1 head
Coriander leaves – 1/2 cup
Salt – to taste


Cooking Instructions


Begin by soaking the rice in water for 30 minutes. Dice the onion and bell peppers into small pieces.
In a large pot, heat the olive oil and add the garlic along with the green chilies. Once the garlic turns golden, incorporate the onions and sauté on low heat until they soften.




- After the onions are cooked, add the soaked rice and raise the heat to high, frying the rice for about 2 minutes.
