Delicious Methi Parathas Recipe for Winter Mornings
Warm Up Your Winter with Methi Parathas
As winter sets in, many households begin to whip up a range of delightful dishes, especially in rural areas where *methi parathas* (fenugreek flatbreads) are a popular choice. These *parathas* are not only flavorful but also packed with nutrients, making them a perfect breakfast option paired with tea, yogurt, pickles, or chutney. The best part is that they require minimal ingredients. Prabha Sharma, a homemaker, shares a straightforward recipe for crafting crispy and tasty *methi parathas*. The ingredients needed include whole wheat flour, fresh fenugreek leaves, an onion, garlic, green chilies, cumin seeds, red chili powder, coriander powder, turmeric, salt, and *ghee* (clarified butter). With these simple components, you can easily create these delicious *parathas* at home.
To start, Prabha Sharma advises washing the fenugreek leaves thoroughly in clean water to eliminate any dirt. After that, finely chop the fenugreek, rinse it again, and drain the excess water. Next, chop the onion, garlic, and green chilies finely. Heat a pan on the stove, add two tablespoons of mustard oil (or *ghee*), and once it’s hot, add the cumin seeds for tempering. Sauté the chopped onion, garlic, and green chilies until they turn golden brown. Then, mix in the red chili powder, coriander powder, turmeric, and salt to taste, stirring well. Once the spices are cooked, incorporate the finely chopped fenugreek and cook for about five minutes, stirring continuously.
This mixture creates a flavorful fenugreek stuffing for the *parathas*. In a mixing bowl, combine the whole wheat flour with half a teaspoon of salt and add the prepared fenugreek stuffing. Gradually add water to knead the mixture into a soft dough. Incorporate two tablespoons of *ghee* into the dough, knead it again, and cover it, allowing it to rest for five minutes. Next, divide the dough into small portions and roll them out. Apply a bit of ghee to each rolled piece, fold it, and then roll it out again into the shape of a paratha. Cook the paratha on a hot griddle (tawa), applying ghee until both sides are well-cooked; once it turns crispy and golden brown, remove it from the griddle. Serve these hot methi (fenugreek) parathas with a garlic, tomato, and onion chutney, or alongside yogurt, pickles, or a vegetable dish. They are especially delightful when enjoyed on a winter morning with tea or buttermilk. This easy recipe is a fantastic option for a delicious breakfast.
