Commonly, households prepare *Kattu* (buckwheat) *puris*, *pakoras*, or other fried snacks, but these may not appeal to everyone on a daily basis. If you're searching for a light, tasty, and low-oil *Falahari* (suitable for fasting) dish during the month of *Sawan*, *Kattu Dosa* is a fantastic option.
This dish is not only flavorful but also quick to make. One of the best aspects is that buckwheat flour doesn't need soaking or grinding. Ready in just a few minutes, this dosa becomes crispy and delicious. A spicy potato filling adds to its taste. Buckwheat flour is recognized for its nutritional benefits, including protein, iron, and zinc, which can help sustain energy levels during fasting.
Ingredients for Kattu Dosa
For the Dosa
1 cup buckwheat flour (*Kattu ka atta*)
2 tablespoons yogurt (*dahi*)
1/2 teaspoon rock salt (*sendha namak*)
1/2 cup water
2 tablespoons oil
For the Filling
2 medium-sized boiled and mashed potatoes
1 finely chopped green chili
1 teaspoon grated ginger
1/3 teaspoon cumin seeds (*jeera*)
1/4 teaspoon black pepper powder
Rock salt to taste
1 tablespoon oil
Method
Begin by mixing the buckwheat flour, yogurt, and water in a bowl, whisking until you achieve a smooth batter. Incorporate the rock salt, stir, and let the batter rest for 5 minutes.
Next, heat oil in a pan. Add cumin seeds, followed by ginger and green chili, sautéing lightly. Then, mix in the rock salt, black pepper, and mashed potatoes, ensuring everything is well combined. Cook for a few minutes before turning off the heat. Your filling is now ready.
Now, gently heat a dosa *tawa* (griddle) or a non-stick pan. Pour a ladle of batter and spread it into a circular shape. After cooking for a minute, drizzle a bit of oil on top and cook the other side until it turns golden brown.
Place two spoonfuls of the potato filling in the center of the dosa. Fold the dosa using a spatula and serve it hot.
If desired, this recipe can also be prepared with amaranth flour. For those in a hurry, this dosa is delightful even without the filling when paired with curd.
