Discover the Flavorful Jackfruit Curry

The renowned jackfruit curry, known as *kathal ki sabzi*, hails from Eastern Uttar Pradesh and Bihar, offering a taste reminiscent of mutton. Here’s a straightforward recipe along with the preparation method and the health advantages of jackfruit.

This curry is a fantastic choice for vegetarians, often dubbed "vegetarian mutton." Made with tomatoes, yogurt, and an array of spices, it pairs wonderfully with roti or rice.

Particularly popular during the summer months in Eastern UP and Bihar, jackfruit curry boasts a distinctive flavor that, once cooked, closely resembles mutton, earning it the affectionate title of "vegetarian mutton." The gravy variant is especially favored in these areas.

The dish's spicy and delightful flavor is so enticing that you'll find yourself wanting to prepare it repeatedly. One of the best aspects of this recipe is that it doesn’t require costly ingredients; a tasty curry can be crafted using common spices and staples found in most kitchens.

If you're tired of the usual *dal* and vegetable dishes, this jackfruit curry from Eastern UP and Bihar provides a refreshing alternative. Home cook Gudiya Kumari shared with *Local 18* that the curry is made using raw (unripe) jackfruit.

Its flavor is so rich that it can make even non-vegetarian dishes taste bland in comparison. Gudiya Kumari emphasized that while jackfruit can be enjoyed in both raw and ripe forms, the unripe variety is preferred for this curry.

Making this jackfruit curry is quite easy. Start by peeling the jackfruit and cutting it into small chunks. Boil these pieces in salted water, then lightly fry them to remove any raw scent. Next, heat oil in a pan and sauté cumin seeds, asafoetida (*hing*), onions, tomatoes, and ginger-garlic paste.

After that, incorporate turmeric, red chili powder, coriander powder, yogurt, and *garam masala* to form a thick spice base. Finally, add the jackfruit pieces and cook them thoroughly over low heat. Garnish with fresh coriander and serve hot with roti, paratha, or rice.

Additionally, Dr. Riddhi Pandey highlighted that jackfruit is not only tasty but also offers numerous health benefits. Its fiber content aids in strengthening the digestive system and alleviating constipation. Jackfruit is also packed with antioxidants, enhancing the body's immunity and providing protection against infections.
