Begin by selecting the best tomatoes for your pickle. Opt for fresh, firm tomatoes and steer clear of any that are green or overly soft. The quality of tomatoes is essential for achieving the best flavor in your pickle.
Wash the tomatoes thoroughly and allow them to dry for about 10 minutes, either in the sun or under a fan. Cut each tomato into four wedges, ensuring not to slice them smaller. Remove the seeds and set the tomato pieces aside while you prepare the spices.
For the spice mix, gather coriander seeds, fennel seeds, cumin seeds, fenugreek seeds, yellow mustard seeds, turmeric powder, salt, asafoetida (hing), black pepper, Kashmiri red chili powder, yellow mustard oil, and dry mango powder (amchur). Lightly roast the moisture-containing spices over low heat for 2 to 3 minutes, then grind them coarsely in a mixer.
Combine the cut tomatoes with turmeric and salt, allowing them to rest for 4 to 5 hours. This step helps extract moisture, which is vital for preserving the pickle. After this time, drain the excess water and let the tomato pieces air-dry for another 10 minutes.
Next, prepare the spice mixture by adding salt to the ground spices in a bowl. Heat yellow mustard oil until hot, then let it cool slightly before mixing it into the spices. This creates a flavorful masala for the tomatoes.
Stuff each tomato piece generously with the masala, and spread any leftover mixture on top. Drizzle a bit more mustard oil over the filled tomatoes. Place the pickle in the sun for a day to enhance its flavor and speed up the pickling process. Finally, transfer the mixture into a clean, dry glass jar and let it mature for 10 to 15 days.
This method of preparing tomato pickle results in a unique taste that differs significantly from typical pickles, curries, or chutneys. Since it's not commonly made, this recipe is perfect for those looking to create something special at home. When stored properly, this pickle can last for several months.
