Ingredients for Special Thandai
1 liter of chilled milk
8–10 almonds
6–8 cashews
10–12 pistachios
2 tablespoons of melon seeds
1 tablespoon of poppy seeds
4–5 green cardamoms
1 small piece of cinnamon
5–6 black peppercorns
A few strands of saffron
Sugar to taste
Rose petals
Preparation Method
Begin by soaking the almonds, cashews, pistachios, poppy seeds, and melon seeds in water for 3–4 hours to soften them. After soaking, peel the almonds and blend all the soaked nuts along with green cardamom, black peppercorns, and cinnamon in a mixer. Add a bit of milk to create a fine, smooth paste.
Next, pour cold or boiled milk into a large bowl and thoroughly mix in the nut paste. Sweeten with sugar to taste and stir until fully dissolved. Then, incorporate 1-2 teaspoons of saffron threads that have been soaked in lukewarm milk, enhancing the drink's color and fragrance.
Strain the mixture through a sieve to achieve a smooth consistency. Chill in the refrigerator for 1-2 hours before serving. When ready to serve, garnish with finely chopped pistachios, almonds, and rose petals, and enjoy it cold.
