This dessert, crafted from rice, milk, and sugar, is both tasty and light. Traditionally served chilled in earthen bowls (*kulhads*), it enhances the dish's aroma and flavor. Below is a simple recipe to create thick, rich, and creamy *Phirni* at home, reminiscent of what you would find in local markets.

**Ingredients for Phirni:**


  • Full-cream milk – 1 liter
  • Basmati rice – 4 tablespoons
  • Sugar – 1/2 cup
  • Cardamom powder – 1/2 teaspoon
  • Saffron strands – 10-12
  • Chopped dry fruits – 2 tablespoons
  • Rose water or Kewra water – 1 teaspoon


**Method for Making Phirni:**


Begin by thoroughly washing the rice and soaking it in water for 20 to 30 minutes.


After soaking, drain the water and let the rice dry slightly. Grind the rice in a mixer until it reaches a coarse consistency, avoiding a fine powder.


In a heavy-bottomed pan, pour the full-cream milk and bring it to a boil over medium heat.


Once boiling, lower the heat; take a small amount of the hot milk and mix it with the saffron strands in a bowl.


Gradually add the coarsely ground rice to the boiling milk while stirring continuously to prevent lumps. Cook the mixture on low heat until the rice is tender and the milk thickens.



When the rice is cooked and the mixture resembles *rabri*, add the sugar and the saffron-infused milk.


Continue cooking for another 3-4 minutes until the sugar dissolves, then stir in the cardamom powder, chopped dry fruits, and rose water before removing from heat.


For the best taste, serve *Phirni* chilled. Allow it to cool, transfer it to an earthen pot (*kulhad*), garnish with almonds and pistachios, and enjoy!
