The thought of Chole-Bhature is enough to make anyone crave it, but Paneer Bhatura takes the flavor to another level. Street vendors often serve bhaturas that are overly greasy, which isn't the healthiest option.

Why not try making soft, fluffy bhaturas filled with paneer at home, just like those from your favorite stalls? Here’s a simple recipe for preparing Paneer Bhatura in your kitchen.

Ingredients:
2 cups all-purpose flour (Maida)
1/4 cup semolina (Sooji)
1/2 cup yogurt (Curd)
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp sugar
Salt to taste
Lukewarm water for kneading
150 grams paneer (Cottage cheese)
2 tbsp fresh coriander leaves
1/2 tsp red chili powder
1/2 tsp chaat masala
Salt to taste
Oil for frying


Preparation Steps

Begin by sifting the all-purpose flour and semolina into a large mixing bowl. Incorporate salt, sugar, baking powder, baking soda, and two tablespoons of oil, mixing thoroughly.


Create a small well in the center and add the yogurt. Gradually knead a soft dough using lukewarm water.


Once the dough is smooth, coat it lightly with oil, cover it with a damp cloth, and let it rest in a warm area for about 2 hours to allow it to rise.


In the meantime, prepare the stuffing by combining grated paneer, finely chopped coriander leaves, red chili powder, chaat masala, and salt in a bowl. Mix gently to avoid crumbling the paneer.


After the resting period, lightly knead the dough again and divide it into pieces slightly larger than a lemon.


Take one piece, shape it into a small cup, and fill it with 1–2 spoonfuls of the paneer mixture. Pinch the edges together to seal the filling inside.


Dust the filled dough ball with a bit of dry flour or oil, then roll it out into an oval shape using a rolling pin. Heat a generous amount of oil in a deep pan (kadhai) and carefully place the rolled bhatura into the hot oil.


Gently press down on the bhatura with a slotted spoon to help it puff up like a balloon.


Once it turns a light golden color on one side, flip it over to cook the other side.


Remove the bhatura and place it on a kitchen towel to absorb excess oil. Your delicious paneer bhatura is now ready to serve.
