As the evening sets in, many find themselves yearning for a savory snack or something from outside. Imagine being able to whip up a delightful dish at home that is both hygienic and bursting with flavor—your efforts will surely earn you compliments. Today, we will explore how to create Vada Pav, a quintessential street food from Mumbai. What makes this dish so iconic? Let’s dive into the recipe to discover its secrets...
To prepare authentic Mumbai-style Vada Pav, gather the following ingredients: 4 medium boiled potatoes, 1 cup of gram flour (besan), 6–7 cloves of garlic, a 1-inch piece of ginger, 2 green chilies, half a teaspoon of mustard seeds, half a teaspoon of turmeric powder, 8–10 curry leaves, 2 tablespoons of finely chopped fresh coriander, salt to taste, and oil for frying. Additionally, have 4 pav (buns), 2 tablespoons of dry garlic chutney, 2 tablespoons of green chutney, and some fried green chilies ready.
Start by making the potato filling. Mash the boiled potatoes until smooth. In a pan, heat some oil and add the mustard seeds. Once they start to pop, toss in the curry leaves, chopped ginger, garlic, and green chilies, sautéing briefly. Then, mix in the turmeric, salt, and mashed potatoes, ensuring everything is well combined. Finally, add the fresh coriander and turn off the heat. Allow the mixture to cool before shaping it into small, round patties.
Next, prepare the gram flour batter. In a bowl, mix the gram flour, turmeric, and salt. Gradually add water to achieve a thick, smooth batter. The right consistency is crucial—it should be neither too thin nor too thick, allowing it to coat the potato patties perfectly for a crispy finish when fried.
Heat oil in a pan for frying. Dip each potato patty into the gram flour batter, ensuring they are well-coated, and carefully place them in the hot oil. Fry over medium heat until they are golden brown and crispy. Once cooked, remove the vadas and place them on a plate. Be cautious not to let the oil cool too much, as this can cause the vadas to absorb excess oil.
Now, prepare the pav. Slice the pav open without completely separating the halves. Spread dry garlic chutney and green chutney inside.
Place a hot aloo vada in the center and serve it with a fried green chili on the side. Your homemade Mumbai-style vada pav is now ready to enjoy.
For an authentic Mumbai flavor, make sure to use the dry garlic chutney. The oil should be hot enough for frying the vadas, but avoid excessively high heat; this ensures a crispy exterior while keeping the inside soft. Serve the vada pav immediately after assembling to enjoy its full flavor and crispiness.
