Ingredients
All-purpose flour (*Maida*) – 2 cups
*Mawa*/*Khoya* – 1 cup
Yogurt – ½ cup
Baking soda – ¼ teaspoon
Cardamom powder – ½ teaspoon
Oil/Ghee – for frying
Sugar – 1 cup
Water – 2 cups
Cardamom powder – ½ teaspoon
Saffron – a few strands (optional)
Method
To prepare Gulab Jamun, start by mixing the all-purpose flour, *mawa* (or *khoya*), yogurt, baking soda, and half a teaspoon of cardamom powder in a large bowl. Combine these ingredients thoroughly to form a soft dough.
If necessary, you can add a bit more yogurt. Once the dough is ready, cover it and allow it to rest for about 15 to 20 minutes. Make sure the yogurt is fresh and not sour.
Next, grease your hands with a little refined oil or ghee and shape the dough into small, smooth balls. Ensure there are no cracks on the balls, as this could lead to them splitting during frying. Heat ghee or oil in a deep pan (kadhai) and fry the balls over low to medium heat until they achieve a golden brown color.
To make the sugar syrup, combine 1 cup of sugar and 2 cups of water in a pan and bring it to a boil. Once the sugar has fully dissolved, add cardamom powder and, if you like, a few strands of saffron. Turn off the heat once the syrup reaches a light consistency.
