Delicious Gobi Masala Recipe for Navratri Without Garlic or Onion
Gobi Masala: A Flavorful Dish for Festive Occasions
Cauliflower is a beloved vegetable enjoyed by many. While traditional recipes like cauliflower parathas, Gobi Manchurian, and Aloo Gobi are popular, a simple stir-fried version known as 'Gobi Fry' can also be delightful. During the Navratri festival, many choose to avoid garlic and onion, which can sometimes lead to less flavorful dishes.
If you're looking to prepare Gobi Fry without garlic or onion, this recipe is ideal. It captures the authentic taste reminiscent of roadside eateries, even without these ingredients. Let’s dive into the recipe.

Ingredients for Gobi Masala:
1 medium cauliflower
2 potatoes
3 tomatoes
2 green chilies
1-inch piece of ginger
1 tsp cumin seeds
2 pinches of asafoetida (hing)
1/2 tsp turmeric powder
1 tsp Kashmiri red chili powder
1.5 tsp coriander powder
1/2 tsp garam masala
1 tbsp dried fenugreek leaves (kasuri methi)
1/2 tsp dry mango powder (amchur) or chaat masala
Fresh coriander leaves, finely chopped
Salt to taste
3 to 4 tbsp oil or ghee
Instructions for Gobi Masala:
Begin by cutting the cauliflower into medium florets. Soak them in lukewarm water mixed with half a teaspoon of salt and some turmeric for 10 minutes.
After soaking, rinse the cauliflower thoroughly, drain it, and allow it to dry. Heat two tablespoons of oil or ghee in a pan, add the cauliflower, and sauté over medium heat until it turns a light golden color.
Cook the cauliflower until it's about 70% cooked, then remove it from the pan and set it aside.
In the same pan, add cumin seeds and asafoetida. Once the cumin seeds start to crackle, add grated ginger and chopped green chilies, and sauté.
Next, incorporate finely chopped tomatoes or tomato purée along with turmeric powder, red chili powder, coriander powder, and salt to taste.
Sauté the mixture until the oil separates from the spices.
Once the masala is well-cooked, add the sautéed cauliflower and mix gently with the spices.
Add about half a cup of water, cover the pan, and let it simmer on low heat for 5–7 minutes.
After the cauliflower is cooked, remove the lid and sprinkle garam masala, dried fenugreek leaves, and dry mango powder. Finally, garnish with fresh coriander leaves and mix well.
Your 'Gobi Masala'—prepared without onion or garlic—is now ready to be served hot with tandoori roti or parathas.
