1. Begin by preparing the idlis. Pour the idli batter into molds, steam them, and set the cooked idlis aside. Alternatively, you can use store-bought idlis. Mini idlis are ideal for this recipe as they get coated evenly with the podi and ghee.
2. Heat a pan or wok and add ghee. Once the ghee is hot, toss in the mustard seeds. When they start to splutter, add the dry red chilies, curry leaves, and asafoetida. Sauté for a few seconds, being careful not to let them burn.
