**Dahi Bhindi Recipe**
*Dahi Bhindi* combines a tangy yogurt base with flavorful spices. Here’s how to make it:
**Ingredients**
2 cups okra (bhindi)
1 tablespoon *urad dal* (split black gram)
1 cup yogurt (curd)
1 medium onion
1 medium tomato
1/2 teaspoon cumin seeds
2 tablespoons oil
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon mustard seeds
8-10 curry leaves
2 green chilies
Salt to taste
**Method**
Begin by chopping the okra into small pieces (about 2 cups). Next, finely dice the onion and tomato.
Heat 1 tablespoon of oil in a pan and sauté the okra until it's tender. Once done, remove the okra from the pan and add a bit more oil. When the oil is hot, toss in 1/2 teaspoon of cumin seeds; once they start to sizzle, add the chopped onion and tomato.
Stir in 1 teaspoon each of turmeric powder, red chili powder, and coriander powder, along with salt to taste, mixing everything thoroughly.
After the spices are well combined, add 1 cup of yogurt to the okra mixture and stir until the yogurt is fully integrated. Turn off the heat.
For the *tadka* (tempering), heat another tablespoon of oil in a separate pan. Once hot, add 1 teaspoon of mustard seeds, 8-10 curry leaves, and 2 chopped green chilies, sautéing briefly.
Finally, pour this tempering over the okra and yogurt mixture. For an extra flavor boost, consider adding a paste made from 7–8 cashews. Cook on low heat for 2–3 minutes while stirring, then turn off the heat.
