Transforming Leftover Dry Coconut into Coconut Barfi


After festivals or religious events, many of us find ourselves with a surplus of dry coconut. Often, it remains unused, taking up space in our kitchen. If you can relate to this, fret not!

We have an amazing recipe that will help you turn that dry coconut into delectable coconut barfi (fudge) that tastes just as good as what you would find in sweet shops. It's simple to prepare and absolutely delightful to savor.

**Ingredients for Coconut Barfi**
2 cups of dry coconut (grated or finely ground)
1 cup of milk (preferably full-cream)
3/4 cup of sugar (adjust to your preference)
1/2 cup of cream (malai) or milk powder (for a rich, khoya-like flavor)
2 tablespoons of desi ghee
1/2 teaspoon of cardamom powder
Chopped nuts: almonds and pistachios (for topping)

**Steps to Prepare Coconut Barfi**
Begin by grating the dry coconut. For a smoother texture akin to store-bought barfi, you can pulse the grated coconut in a mixer until fine.
Next, heat a kadahi (wok) or pan and add the desi ghee. Once warmed, incorporate the ground coconut. Roast it on low heat for 2 to 3 minutes, stirring continuously to avoid browning; the goal is to release a delightful aroma.

After roasting, pour in the milk and add the cream (or milk powder). Stir well and allow it to cook over medium heat.

When the coconut has absorbed the milk, add the sugar. The mixture will become moist upon adding sugar, so keep cooking until it thickens and starts pulling away from the pan's sides. Once it resembles dough, turn off the heat, mix in the cardamom powder, and combine thoroughly.
Grease a plate or tray with a bit of ghee. Pour the hot mixture onto the plate and spread it evenly into a square shape using a spoon or small bowl.

Top with chopped almonds and pistachios, pressing them gently into the barfi. Let it set for 2–3 hours at room temperature or in the refrigerator.
If you lack malai or milk powder, condensed milk can be used instead, but remember to reduce the sugar accordingly.
