How to Prepare Bitter Gourd and Onion Stir-Fry (Karela-Pyaz Sabzi)

Bitter gourd, known as karela, is a powerhouse of health benefits. It contains essential compounds like charantin and polypeptide-p, which are known to help manage blood sugar levels, enhance digestion, and support weight loss. There are various ways to cook bitter gourd, including stuffed versions or simple stir-fries, but a combination of bitter gourd and onions creates a particularly delightful dish. The addition of onions and spices significantly elevates the flavor. Let’s explore how to make this flavorful stir-fry.

The key challenge when cooking bitter gourd is to mitigate its natural bitterness. Begin by taking half a kilogram of bitter gourd. Clean them thoroughly, trim the ends, and lightly peel the skin. Cut each piece in half, and if desired, remove the seeds. Sprinkle a spoonful of salt and turmeric powder over the pieces and mix well. Cover the bowl and let it rest for at least thirty minutes. In the meantime, chop five onions into quarters.

You can let the bitter gourd sit for half an hour or longer if you have the time. After this period, squeeze out the bitter liquid from the pieces, but do not rinse them with water. Next, heat a generous amount of mustard oil in a pan. Once the oil is hot, add the bitter gourd pieces and fry them, turning occasionally until they are cooked through.

After frying the bitter gourd for about 8–10 minutes, remove them from the pan. This frying process helps to further reduce the bitterness. In the same pan, add asafoetida (hing) and cumin seeds (jeera) for tempering. Then, add the finely chopped onions along with one or two dried red chilies. Season with half a teaspoon of salt, two teaspoons of coriander powder, and one teaspoon of red chili powder. Mix the spices thoroughly before adding the onions you set aside, along with a bit of jaggery (gur).

The jaggery will not sweeten the dish but will enhance the overall flavor and balance the spices. Next, stir in a teaspoon of garam masala and 3–4 chopped green chilies. Add the fried bitter gourd back into the pan and mix everything well. If the mixture appears too dry or the spices begin to burn, add a splash of water; otherwise, cover the pan and let it simmer on low heat.

After cooking on low heat for 3–4 minutes, stir the dish again. Finally, add a teaspoon of ground fennel seeds (saunf) and a teaspoon of dry mango powder (amchur). Mix well, and your crispy and flavorful bitter gourd and onion stir-fry is ready. Garnish with finely chopped fresh coriander leaves. Following this method will fill your home with a delightful aroma, and your family will surely enjoy this dish.
