When it comes to desserts, *halwa* is often the first sweet that springs to mind. While the traditional versions made from semolina (*suji*) or wheat flour are popular, have you ever tasted *Besan Halwa* (halwa made from gram flour)? This delightful dish offers a unique flavor and an enticing aroma. If you're interested in preparing *Besan Halwa* at home, follow this straightforward recipe.



**Recipe for Besan Halwa**

**Ingredients Needed for Besan Halwa:**
1 bowl of Besan (Gram flour)
3/4 bowl of Desi Ghee (Clarified butter)
3/4 bowl of Sugar
2.5 bowls of Water or Milk
1 tablespoon of Suji (Semolina)
1/2 teaspoon of Cardamom powder
2 tablespoons of Dry fruits
7-8 strands of Saffron


**Steps to Prepare Besan Halwa:**
Begin by pouring 2.5 bowls of water into a pan, adding sugar and saffron strands, and placing it on the stove. Once it reaches a boil, turn off the heat and set it aside.


Next, heat two tablespoons of ghee in a heavy-bottomed pan (*kadhai*). Add chopped cashews and almonds, roasting them until they turn a light golden color, then transfer them to a plate and set aside.


In the same pan, add the remaining ghee. Once melted, incorporate the gram flour (*besan*) and the tablespoon of semolina (*suji*). The addition of semolina helps prevent the *halwa* from becoming sticky and contributes a delightful texture.


Lower the heat and continuously stir the gram flour as it roasts. Initially, it will absorb the ghee and feel dense, but as it cooks, it will start to release the ghee.


After about 12-15 minutes, the gram flour will turn a golden brown, filling your kitchen with a rich, nutty aroma. Once well-roasted, keep the heat low and gradually pour the hot sugar water into the pan while stirring continuously to avoid lumps.



In just 3-4 minutes, the mixture will thicken and start to pull away from the sides of the pan. At this point, add the cardamom powder, roasted dry fruits, and the remaining tablespoon of ghee to the halwa.


Incorporating ghee at the end gives the halwa a beautiful sheen. Mix everything well, cook for another minute, and then turn off the heat.
