Ingredients for Paneer Dosa

Ready-made dosa batter - as required
Salt - to taste
Paneer - 1/2 to 1 cup (grated or diced)
Onion - 1/2 (finely chopped)
Tomato - 1/2 (finely chopped)
Green chilies - 1-2 (finely chopped, adjust to taste)
Coriander leaves - 1-2 tablespoons (finely chopped)
Oil or ghee - 1-2 tablespoons
Mustard seeds - 1/2 teaspoon
Turmeric powder - 1/4 teaspoon
Red chili powder - 1/2 teaspoon (to taste)
Coriander powder - 1 teaspoon
Garam masala or pav bhaji masala - 1/2 teaspoon
Salt - to taste
Preparation Method

Begin by heating oil or ghee in a pan or wok. If desired, add mustard seeds and allow them to crackle. Next, incorporate the finely chopped onion and green chilies, sautéing until the onions turn a light pink hue.
Introduce the chopped tomatoes and cook until they soften. Then, add turmeric powder, red chili powder, coriander powder, garam masala or pav bhaji masala, and salt, mixing thoroughly.
Fold in the grated or crumbled paneer, stirring gently with the spices for 1-2 minutes. Avoid overcooking to prevent the paneer from becoming tough.
Stir in the finely chopped coriander leaves, mix well, and remove from heat. Your stuffing is now ready.
Season the dosa batter with salt to taste and add water to achieve a thinner consistency suitable for making dosas.
Heat a non-stick pan or dosa tawa. Once hot, apply a small amount of oil and wipe it with a cloth or tissue paper. Sprinkle a little water on the pan and wipe it off immediately to help maintain the temperature.
Pour a ladle of batter onto the pan and spread it thinly in a circular motion using the bottom of the ladle. Keep the heat at medium while cooking. Drizzle a bit of oil or ghee around the edges and on top of the dosa.
When the dosa turns golden and crispy on the bottom, place 2-3 tablespoons of the paneer stuffing in the center and fold it over. Serve the hot paneer dosa with coconut chutney and sambar.
