Semolina – 1/2 kg
Ghee – 200 grams
Edible gum – 3/4 cup
Coconut powder – 1 cup
Powdered sugar – 1/2 kg
Cashews – 1 cup
Almonds – 1.5 cups
Pistachios – 3/4 cup
Makhana – 3 cups
Raisins – 1/2 cup
Cucumber seeds – 1 cup
Cardamom powder – 1 teaspoon


Step-by-Step Recipe for Making Panjiri

Recipe

Begin by heating a pan and adding a small amount of ghee. Once hot, add the edible gum and fry it until it swells and nearly doubles in size.

Next, transfer the fried gum to a bowl and set it aside. In the same pan, add a bit more ghee and fry the makhana until they are crispy.

Then, add the cashews, almonds, and pistachios to the ghee, frying them thoroughly before removing them to set aside.

- Combine the makhana, cashews, pistachios, almonds, and gum in a mixer and grind them coarsely. In another pan, add some ghee and fry the raisins and cucumber seeds.


- Afterward, add semolina to the ghee and cook it until it turns a golden brown color.
- Once done, mix in the coconut powder and cardamom powder thoroughly. Take a large bowl and first add the cooked semolina.
- Then, incorporate the coarsely ground nuts and mix everything until uniform.
- Finally, add the raisins, cucumber seeds, and powdered sugar, mixing well. Your Dry Fruit Panjiri is now ready to enjoy.
