Preparation Steps for Green Moong Cutlets
Begin by coarsely grinding the soaked green moong in a mixer, ensuring it remains slightly coarse for a crispier texture.
Transfer the ground moong to a bowl and mix in the mashed boiled potatoes. Add the chopped onions, green chilies, ginger, coriander, red chili powder, garam masala, chaat masala, and salt, mixing thoroughly.
Incorporate cornflour or breadcrumbs to help bind the mixture effectively.
Shape the mixture into small patties or cutlets.
Heat a little oil in a non-stick pan and shallow-fry the cutlets over medium heat until they turn golden brown and crispy on both sides. Once cooked, remove them from the pan and place them on a plate.
Serve the hot, crispy green moong cutlets with green chutney, sweet tamarind chutney, or tomato sauce for a delightful snack.
