Celebrity Chef Kunal Kapur Launches Pincode: A Culinary Journey in Chandigarh
Kunal Kapur's Culinary Journey
A young hospitality management student from a family of bankers arrived in Chandigarh, unaware that 25 years later, he would establish a luxurious restaurant in the city. This journey reflects his remarkable success, which includes experience in prestigious hotel kitchens across India, participation in the MasterChef reality show, and involvement in renowned culinary events worldwide.
Celebrity chef Kunal Kapur, who has maintained a connection with Chandigarh over the years, has returned to unveil his pan-Indian restaurant, Pincode. "I feel incredibly fortunate that life has come full circle. I hope Pincode thrives here," he expressed.
The Concept Behind Pincode
On the eve of the restaurant's launch, Kunal, dressed in a stylish powder-blue shirt, shared his vision. "This is Pincode's fourth location. While a pincode typically indicates a geographical area, for us, it represents a specific cuisine. We aim to showcase a diverse Indian menu under one roof," he explained. The name evokes nostalgia, reminiscent of old-world charm, which is reflected in the restaurant's decor featuring wooden and cane furniture, vintage postal stamps, antique cameras, and elegant chandeliers, all set against a backdrop of Punjabi folk music.
A Diverse Menu
Kunal takes pride in his vibrant culinary offerings. The menu features innovative dishes such as Gujarati dhokla with a chaat twist, bedmi poori served with doobki-wale aloo, and traditional nihari from Old Delhi alongside Bombay’s tawa pulao. Notably, Pincode at CP67 mall introduces signature dishes unique to this location, distinct from those in Delhi, Abu Dhabi, or Dubai.
Among the standout items are beetroot kanji salad with avocado and arugula, crispy palak salli chaat with sweet yogurt, Rajasthani mutton, kachri ke shole, and Kolkata’s chicken bhartha. The Dakhani matar mushroom, stuffed with spicy green peas and cheese, is marinated with Deccan spices.
Drinks and Desserts
The drink menu is equally impressive, featuring a refreshing paan mocktail infused with gulkand. For dessert, the Amritsari kulfa, rich in kulfi, faluda, and basil leaves, is a must-try.
Food as an Art Form
Kunal likens cooking to art, emphasizing the importance of practice. "For a chef, riyaaz is crucial; without consistent practice, the art fades away!"
Nostalgic Memories
Reflecting on his student days at Dr. Ambedkar Institute of Hotel Management in Chandigarh, Kunal recalls his favorite hangout spot, Chaplin Fast Food in Sector 34 or 35, where the owner generously offered extra portions and free salads to students.
A Memorable Encounter
Once, while working in Noida, Kunal's day off was canceled due to staff shortages. To his surprise, Amitabh Bachchan came in for lunch. As the only chef on duty, Kunal had the chance to serve the legendary actor, who requested simple UP-style tarkari and dal with roti, leaving Kunal overjoyed.
MasterChef Experience
Kunal has not only been a judge on MasterChef India but also on MasterChef America. "I learned that food is deeply tied to emotions. When you cook with passion, the drama unfolds naturally," he noted.
Personal Favorites
Kunal's comfort food is his mother's namak ajwain ki paranthi. In his leisure time, he enjoys watching wildlife and mystery documentaries.
Upcoming Projects
Kunal is also working on two upcoming books: one titled The Table For Two–Recipes For Nuclear Kitchens and another focused on Indian ingredients. Following the launch of Pincode at CP67, he plans to expand to Indore, Goa, and Bengaluru.
