Celebrating Navratri: Saptami and the Delight of Paneer Khurma
Saptami: Honoring Goddess Kaalratri
The seventh day of Navratri, known as Saptami, is dedicated to the worship of Goddess Kaalratri. This form of Goddess Durga is revered for her power to vanquish evil spirits and negative energies, helping devotees overcome challenges such as ignorance, sorrow, illness, and poverty.
Offering to the Goddess
Goddess Kaalratri has a special affinity for jaggery (*gur*), making it customary to offer dishes made with this sweetener on her day. A delightful option for this offering is 'Paneer Khurma', which can be prepared using jaggery instead of sugar.
Recipe for Paneer Khurma
Ingredients
200–250 grams of paneer (cottage cheese)
1 cup jaggery
1/2 teaspoon cardamom powder
1 teaspoon ghee or oil
1.5 cups water
Preparation Method
Begin by cutting the paneer into small, square pieces, ensuring they are firm. In a pressure cooker, combine 1.5 cups of water, 1 cup of jaggery, and 1/2 teaspoon of cardamom powder, stirring well. Heat this mixture on low until the jaggery dissolves, then add the paneer pieces gradually.
Increase the heat, seal the pressure cooker, and wait for one whistle. After that, lower the heat and allow the paneer to cook for about 30 minutes. Once done, let the pressure cooker cool slightly and check if the syrup has thickened. Stir occasionally to prevent sticking, and monitor until the syrup reaches a 'single-thread' consistency.
When the syrup achieves the desired consistency, turn off the heat and let the Paneer Khurma cool. Finally, strain the mixture to separate the paneer from the syrup. The paneer will firm up as it cools, resulting in a delicious sweet dish ready to be offered to Goddess Kaalratri.
