As the weather transitions, we experience bright sunny days paired with refreshing cool breezes in the mornings and evenings. This shift can sometimes lead to a dip in our immune system. If you or your family members are frequently falling ill during this time, consider making a simple change to your diet instead of frequent doctor visits.

During such times, a comforting and traditional South Indian dish, 'Tomato Rasam,' can be incredibly beneficial. This dish is not just a side accompaniment for rice or lentils; it serves as a nutritious soup that fortifies your health. With its tangy, spicy, and zesty flavor, Rasam offers remarkable health benefits. A steaming cup of Rasam can uplift your spirits and rejuvenate your body whenever you're feeling under the weather.

Why is Tomato Rasam Unique?
Its preparation mainly involves fresh tomatoes and a mix of Indian spices like black pepper, garlic, cumin, asafoetida (hing), curry leaves, and turmeric. Tomatoes are packed with Vitamin C and antioxidants, essential for enhancing immunity. Garlic and crushed black pepper are effective in alleviating sore throats, nasal congestion, and colds. Together, these ingredients create warmth in the body and help fend off various infections.

Moreover, it's simple to make and gentle on the stomach. If you're not in the mood for a heavy meal, you can enjoy it as a hot soup or pair it with plain boiled rice.

**Ingredients for Tomato Rasam**
**Tomatoes:** 3-4 large, ripe red tomatoes
**Garlic:** 5-6 cloves
**Black Pepper:** 1 teaspoon (whole)
**Cumin Seeds:** 1 teaspoon
**Tamarind:** A small piece (soak in water if tomatoes are not very sour)
**Curry Leaves:** 10-12 leaves
**Dry Red Chilies:** 1 or 2
**Mustard Seeds:** ½ teaspoon
**Asafoetida (Hing):** A pinch
**Turmeric Powder:** ¼ teaspoon
**Ghee or Oil:** 1 tablespoon (using *Desi Ghee* enhances the flavor)
**Salt:** To taste
**Fresh Coriander:** Finely chopped (for garnish)
**Water:** 2 to 3 cups

**Preparation Method for Tomato Rasam**
The authentic taste of Rasam comes from freshly ground spices. Start by crushing the garlic, whole black peppercorns, and cumin seeds coarsely using a mortar and pestle. Freshly crushed spices provide a flavor that pre-ground powders cannot match.

Chop the tomatoes finely or lightly boil them in a small amount of water. Once softened, mash them thoroughly to extract their juices. If using tamarind, mix the extract with the tomato juice.

Transfer the tomato juice to a cooking pot, adding 2 to 3 cups of water. Incorporate turmeric powder, salt (to taste), and the coarsely crushed spice mixture. Bring the pot to a vigorous boil over medium heat for 5 to 7 minutes, filling your home with a delightful aroma.

After boiling, reduce the heat to a simmer. Prepare the tempering (*Tadka*) in a separate pan by heating ghee or oil and adding mustard seeds. Once they splutter, include asafoetida, dried red chilies, and curry leaves. Quickly pour this hot tempering into the simmering Rasam.

Immediately turn off the heat after adding the tempering and garnish with finely chopped fresh coriander.
Your delicious and nutritious Tomato Rasam is now ready! Enjoy it as a hot soup to combat a cold or savor it in traditional South Indian style with plain boiled rice and papad.
