How to Make Kokum Sherbet
**Ingredients Needed:**
* Dried Kokum: 1 cup
* Sugar or Jaggery: 1.5 cups
* Roasted Cumin Powder: 1 teaspoon
* Black Salt: ½ teaspoon
* Regular Salt: To taste
* Cardamom Powder: ½ teaspoon
* Water: As needed
**Preparation Steps:**
Begin by washing the dried Kokum thoroughly. Soak it in 2 cups of warm water for 2–3 hours until it softens.
Once softened, mash the Kokum in the soaking water and strain the mixture through a fine sieve to collect the juice.
In a separate pot, combine the sugar (or jaggery) with a little water and heat it on low until the sugar dissolves and the syrup thickens slightly. Add the Kokum juice to this mixture.
Next, incorporate black salt, regular salt, roasted cumin powder, and cardamom powder. Cook for 5–7 minutes until it reaches a syrupy consistency.
Remove from heat and let the syrup cool completely. Once cooled, transfer it to a glass bottle and refrigerate. This syrup can last for 1–2 months.
