**Ingredients for Potato-Onion Uttapam**
1 cup Semolina (Sooji/Rava)
½ cup Curd (Yogurt)
1 Raw potato
1 large Onion
1-2 Green chilies, finely chopped
2 tablespoons Fresh coriander leaves
Salt to taste
½ teaspoon Chaat masala or black pepper powder
Water for batter
Oil or butter for cooking
**Preparation Method**
Begin by thoroughly mixing the semolina and curd in a large bowl. Gradually incorporate water to form a thick batter, ensuring it resembles the consistency of idli batter. Season with salt, cover the bowl, and allow it to rest for 10–15 minutes to let the semolina absorb the moisture and expand.
While the semolina is resting, prepare the topping. Squeeze the grated raw potato to eliminate excess moisture. In another bowl, mix the potato, chopped onion, green chilies, fresh coriander, and a pinch of chaat masala or black pepper powder until well combined.
After 15 minutes, check the semolina batter. If it seems too thick, add a bit more water. Heat a non-stick tawa (griddle) or pan on the stove. Once warm, add a few drops of oil or butter and spread it evenly.
Reduce the heat to medium and pour a generous spoonful of batter in the center, spreading it gently to maintain a slightly thick layer, unlike a dosa.
Immediately sprinkle the prepared potato-onion topping over the batter and lightly press it down with a spoon to secure it. Drizzle some oil around the edges and let it cook for 2–3 minutes until the bottom is golden brown.
Once the underside is cooked, carefully flip it over and cook the other side until the potato and onion are light golden and crispy. Once both sides are cooked thoroughly, transfer it to a plate.
