Delicious Vegetable Sandwich Recipe

Vegetable sandwiches are a simple, nutritious, and speedy snack option, perfect for when you're in a rush. You can customize them with your favorite vegetables, enhancing their health benefits. Here’s how to prepare a delightful vegetable sandwich.

Servings: 2

Ingredients:

8 slices of bread
1/2 cup diced cucumber
1/2 cup diced tomato
1/2 cup diced bell pepper
1/4 cup grated carrot and chopped cabbage
1/4 cup diced onion
4 tablespoons mayonnaise or green chutney
Salt to taste
1/4 teaspoon black pepper
1/2 teaspoon chaat masala
2-3 tablespoons butter

Instructions:

Begin by placing all the chopped vegetables (cucumber, tomato, bell pepper, carrot, cabbage, and onion) into a large mixing bowl.

Add the mayonnaise or green chutney to the vegetables, followed by salt, black pepper, and chaat masala. Mix everything thoroughly, ensuring to add salt last to prevent the vegetables from releasing moisture.

Take two slices of bread. If you prefer a toasted sandwich, spread a little butter on the outer sides of the bread.

Evenly distribute the vegetable mixture on one slice of bread, then place the second slice on top to form a sandwich.
Grill the sandwich in a toaster or griller until it turns crispy and golden brown.
Enjoy your hot sandwich with ketchup or chutney.
