3 tbsp onion powder
3 tbsp garlic powder
2½ tbsp cornflour
10 tbsp powdered sugar
2 tbsp dry mango powder (amchur)
1½ tsp dry ginger powder (sonth)
3 tbsp chili flakes
1 tbsp turmeric powder
2 tbsp cumin seeds
3 tbsp black peppercorns
1 tbsp fenugreek seeds
3-4 whole red chilies
2 tbsp whole coriander seeds
2 bay leaves
Salt to taste
Other essentials: A pan, mixer-grinder, sieve

Step-by-Step Preparation:
1. Dry the spices
Begin by placing the cumin seeds, fenugreek seeds, bay leaves, coriander seeds, whole red chilies, and black peppercorns in the sun for 2 hours to eliminate all moisture.

2. Roast the spices
After drying, heat a pan over medium flame. Once hot, add the sun-dried whole spices and roast them on low heat for about 4-5 minutes.

3. Cool and grind
Transfer the roasted spices to a plate and allow them to cool completely. Once cooled, place them in a mixer jar and grind into a fine powder.

4. Combine with other ingredients
Add the onion powder, garlic powder, cornflour, dry mango powder, powdered sugar, dry ginger powder, turmeric, chili flakes, and salt to the ground spice mixture. Blend everything in the mixer until finely mixed, ensuring not to run it continuously for more than 25 seconds.
