Raksha Bandhan Special Barfi: This Raksha Bandhan, instead of purchasing sweets, why not try making them at home? A delightful *barfi* can be crafted using semolina (*suji*), gram flour (*besan*), ghee, milk, and saffron. The preparation is simple and can be completed in just a few minutes. Neha Kumari, a homemaker from Ranchi, has shared a wonderful method for this.

Begin by heating three tablespoons of ghee in a pan. Add cashews, raisins, and any other nuts you prefer; sauté them briefly and set aside in a bowl. Then, add semolina to the same ghee and lightly roast it.

Next, combine four tablespoons of gram flour (*besan*) with the semolina and roast both until they achieve a golden brown color. If necessary, you can add a bit more ghee.

Following this, pour in thick, creamy milk along with half a teaspoon of ghee into the pan. Stir continuously while cooking until the milk evaporates and the mixture thickens to a *halwa*-like consistency.

Grease a plate with a little ghee or line it with butter paper. Transfer the mixture from the pan onto the plate and spread it evenly into a thick, round layer (similar to a *roti*). Top it off with the fried nuts.

Allow the mixture to set under a fan for 1–2 hours. Once it has firmed up, use a knife to cut it into *barfi* shapes. Your delicious homemade *barfi* is now ready! Enjoy it yourself and share it with friends and family.
