**Ingredients for Green Moong Laddus**
Whole green moong (green gram): 1 cup
Soft dates: 1 cup (pitted)
Almonds and walnuts: ½ cup (finely chopped)
Cardamom powder: ½ teaspoon
Desi ghee: 2 teaspoons (for roasting)
**Instructions for Making Green Moong Laddus**
Begin by taking a heavy-bottomed pan and dry-roasting the whole green moong on a low flame for about 10–12 minutes. Once the moong emits a nutty fragrance and its color slightly changes, turn off the heat.
Next, transfer the roasted moong to a plate and allow it to cool completely. After cooling, grind it into a fine powder using a mixer-grinder.
For sweetness, we will use dates. Blend the pitted, soft dates in the mixer until you achieve a thick paste. If the dates are hard, soak them in hot water for 10 minutes to soften.
In the same pan, heat 2 teaspoons of ghee. Add the chopped almonds and walnuts, roasting them until they become slightly crunchy.
Now, incorporate the ground moong dal powder into the pan and roast it with the nuts for 1–2 minutes. Then, mix in the cardamom powder and the prepared date paste. Turn off the heat and stir everything together thoroughly with a spoon.
Transfer the mixture to a bowl. Once it cools enough to handle, lightly grease your palms with ghee and shape the mixture into round *laddus* of your desired size.
