A Simple and Delicious Kadhi Recipe

For those living in hostels and missing home-cooked meals, a quick and flavorful dish like *kadhi* can be a perfect solution. This dish is not only delightful but also requires minimal effort. You can enjoy it with just rice, making it a complete meal. Here’s a straightforward recipe to whip it up.

According to Usha, a homemaker from Ranchi, the first step is to gather some *besan* (gram flour). In a bowl, mix the required amount of warm water for the *kadhi*. Add precisely two tablespoons of *besan* and stir well.

Just two simple steps!

Next, incorporate one tablespoon of a spice paste made from ginger, garlic, black peppercorns, red chilies, cumin seeds, turmeric, coriander powder, and other spices. Blend these ingredients in a mixer, then add two tablespoons of this paste to the *besan* and water mixture. Don’t forget to season with salt to taste.

Heat a pan and pour in two tablespoons of mustard oil. Temper it with fenugreek seeds (*methi*), a bay leaf, and whole spices. Once they start to crackle, add the *besan* mixture you prepared. Cover the pan and let it simmer for about 15 minutes. After 15–20 minutes, you’ll notice it thickening into a rich gravy.

Finish with Yogurt.
Once the *kadhi* is cooked (after approximately 15–20 minutes), take it off the heat. Mix in two tablespoons of well-whisked yogurt. Your delicious *kadhi* is now ready to be served with rice, offering a tasty and nutritious meal.
