Ingredients Needed for Rewri:
1 cup sesame seeds
3/4 cup jaggery
1 teaspoon ghee
1/4 teaspoon cardamom powder
Preparation Method:
To prepare rewri, start by lightly roasting the sesame seeds in a pan over low heat. Remove them from the heat once they become fragrant and turn a light golden hue. Properly roasting the seeds ensures that the rewri will be crispy.
Next, in another pan, heat the jaggery and ghee over low heat, stirring continuously to prevent burning. Once the jaggery has melted and thickened to a slightly sticky texture, it’s ready. Add the roasted sesame seeds to the jaggery and mix thoroughly.
At this point, quickly stir the mixture to ensure the sesame seeds are evenly coated with jaggery. Enhance the flavor by adding a pinch of cardamom powder and mix for an additional minute.
Transfer the mixture onto a greased plate or tray and flatten it out. You can use a rolling pin or a spoon for an even spread. Allow it to cool for about 20-25 minutes. Once set, cut it into your preferred shapes. Your rewri is now ready to enjoy!
