What is Besan Kharna?
**Besan Kharna**
This traditional dish from Rajasthan is not only popular in its home state but also loved throughout North India. Here’s how to prepare it:
Ingredients Needed
**Main Ingredients**
1 to 1.5 cups of *besan* (gram flour)
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
2-3 tablespoons of oil
Salt to taste
Water as needed
**Gravy Ingredients**
2 medium onions, finely chopped
2 small tomatoes, finely chopped
1 tablespoon ginger-garlic paste
Whole spices: cloves, cardamom, cinnamon, and bay leaf
1 teaspoon turmeric powder
2 teaspoons red chili powder
1/2 teaspoon coriander powder
1/2 teaspoon *garam masala*
1/2 teaspoon *kasuri methi* (dried fenugreek leaves)
3 tablespoons of oil
1 teaspoon cumin seeds
Salt to taste
Preparation Method
**Steps to Make Besan Kharna**
Begin by placing the *besan* in a medium-sized bowl. Add salt, red chili powder, turmeric, and enough water to create a thick batter. Steam this mixture until fully cooked, then cut it into small squares.
In a pan (*kadhai*), heat oil and fry the pieces until they are golden brown. Set them aside on a plate.
For the gravy, roast cumin seeds and whole spices in the same pan, then add the chopped onions and ginger-garlic paste. Once the onions are translucent, incorporate the tomatoes along with turmeric, coriander powder, *garam masala*, and red chili powder. Cook until the oil separates from the mixture.
Add the fried gram flour pieces to the gravy, adjust the consistency with water, and let it simmer on low heat for about 5–7 minutes.
