Ingredients for Makuti:

Moong dal: 1/2 cup
Broken Basmati rice: 2 tablespoons
Full-cream milk: 1 liter
Sugar: 3/4 cup
Saffron strands (soaked in milk): 10-12
Cardamom powder: 1/2 teaspoon
Cashews and almonds: 2 tablespoons
Pistachios: 1 tablespoon
Ghee: 1 tablespoon


Steps to Prepare Makuti

Begin by rinsing the moong dal and rice thoroughly, then soak them in water for 30 minutes.

After soaking, drain the water and place the mixture in a pressure cooker with one cup of water. Cook on medium heat until you hear 2-3 whistles.

Once cooked, allow the dal and rice to cool, then grind them coarsely in a mixer.

In a heavy-bottomed pan, pour the full-cream milk and bring it to a boil over medium heat. Once boiling, reduce the heat and let it simmer for 8-10 minutes to thicken.

Add the ground moong dal and rice mixture to the boiling milk, stirring continuously.

Cook this mixture on low heat for 15-20 minutes, stirring occasionally to avoid sticking.

As it thickens, incorporate the sugar, saffron-infused milk, and cardamom powder, mixing well. Finally, add the chopped roasted nuts and turn off the heat.

Let the Makuti cool slightly before serving. Transfer it to a bowl, garnish with pistachios, and enjoy!
