Unlike the lighter fare of summer, winter brings a delightful array of treats such as peanuts, gajak, and carrot halwa. Gajak, in particular, becomes a popular choice, with numerous varieties available in the market. This year, consider making your own dry fruit gajak or chikki, which not only offers health benefits but also tantalizes the taste buds. A well-made gajak should be crispy, easily breakable, and not stick to your teeth, ensuring that the entire family can enjoy this delightful treat filled with the goodness of cashews, almonds, pistachios, raisins, sesame seeds, and jaggery.



Ingredients:


Sesame seeds: 1 cup
Ghee: 1-2 tablespoons
Jaggery: 200 grams
Chopped dry fruits: 100 grams
Peanuts: 50 grams


Preparation Method:


- Begin by heating a pan on the stove. Add the sesame seeds and roast them until they turn a light brown.
- Once roasted, transfer the seeds to a plate to cool. Next, roast the dry fruits such as cashews, pistachios, almonds, and peanuts over low heat.
- Be cautious with the heat to prevent the nuts from burning and developing a bitter taste. After roasting, remove the nuts from the heat and add ghee to the pan.



- Add the jaggery to the pan and allow it to melt, stirring to prevent it from sticking. Continue this for 1-2 minutes.
- Once the jaggery is melted, incorporate the roasted sesame seeds, mixing thoroughly to avoid lumps.
- With the heat still low, add the roasted dry fruits to the sesame-jaggery mixture and stir well. Let it cook for another 1-2 minutes.
- Prepare a flat plate by greasing it lightly with ghee. Pour the mixture onto the plate and spread it evenly.
- After it cools slightly, cut it into squares or rectangles as preferred. Allow the gajak to cool completely to room temperature.
