**Creamy Rabri Recipe**
Here’s how to create authentic, *Halwai*-style *Rabri* at home without any additives:

**Ingredients**
1 liter full-cream milk

1 teaspoon *ghee* (clarified butter)

1/2 teaspoon cardamom powder

1/2 cup sugar or jaggery

2 teaspoons chopped almonds, pistachios, and cashews

A few strands of saffron

**Method**
To prepare *Rabri*, start with a heavy-bottomed pan.

Pour in the full-cream milk and heat it on the stove until it reaches a boil.

Stir occasionally to avoid the milk sticking to the bottom.

Once boiling, lower the heat and allow it to simmer.

A layer of cream (*malai*) will form on top as it cooks.

Push this cream towards the sides of the pan to enhance the flavor of the *Rabri*.

When the milk reduces to half its original volume and takes on a creamy hue, your *Rabri* is nearly done.

Soak the saffron strands in a bit of warm milk and add this to the pan for a delightful aroma and a lovely yellow color.

Incorporate the cardamom powder next.
