A Festive Culinary Experience for Navratri

The upcoming Chaitra Navratri 2026 invites participants to embrace fasting with a focus on mindful enjoyment rather than mere abstinence. Renowned chefs Ashish Bali and Harish Bhangri from the School of Hospitality Management at RIMT University in Mandi Gobindgarh have crafted a special Vrat menu that harmonizes comfort, nutrition, and festive spirit, showcasing how traditional ingredients can be both healthy and delightful.


Central to this menu are the sabudana and samak rice idlis, served with a comforting falahari sambar. This dish is not only light on the stomach but also packed with energy. The idlis, created from soaked sabudana and barnyard millet mixed with curd, are fluffy and tender, while the sambar, made with mashed bottle gourd, pumpkin, and potatoes, is seasoned with cumin, providing a warm and flavorful complement.


A standout feature of the meal is a colorful festive platter that embodies the spirit of Navratri fasting. It includes sweet pumpkin pooris, where mashed pumpkin and jaggery are combined with kuttu flour and fried to a perfect golden hue, alongside spinach pooris infused with green puree and spices for a savory touch. Crispy arbi, sautéed with carom seeds and mild spices until golden, adds a delightful crunch.
