1 cup Semolina
½ cup Yogurt
½ teaspoon Baking soda
Spinach paste
Saffron food color
Green food color
Green chilies
Salt
Oil

Steps to Prepare Semolina Tiranga Dhokla:

Begin by combining semolina and yogurt in a bowl to form a smooth batter.
Next, add salt and a pinch of sugar, allowing the mixture to rest for 15-20 minutes to let the semolina swell slightly.
After resting, incorporate baking powder or Eno fruit salt into the batter and mix gently.

Divide the batter into three portions. To the first portion, add turmeric for a saffron hue, leave the second portion plain, and mix green food color into the third portion for the green layer.
Boil water in a steamer and lightly grease a dhokla tray or plate with oil.

Pour the saffron batter into the tray first, spreading it evenly, followed by the plain batter, and finally the green batter to achieve the tricolor effect.
Steam the dhokla over medium heat for 15-20 minutes.
Once done, allow it to cool slightly before removing it from the tray. For the tempering:
Heat oil in a pan, add mustard seeds, curry leaves, and green chilies, and sauté. Drizzle this tempering over the dhokla.
